On 14 July 2025, culinary students from SEGi took their learning beyond the kitchen as they explored the full journey of chocolate production during a visit to the Malaysian Cocoa Board at the Cocoa Research and Development Centre in Samarahan. This enriching experience brought to life the intricate processes behind one of the world’s most beloved ingredients—cocoa—offering a rare glimpse into the cultivation, fermentation, drying, grinding, tempering, and moulding of chocolate.
As part of the Chocolate and Confections module, the half-day educational tour enabled students to witness how raw cocoa transforms into refined chocolate products. Guided by industry experts, the visit underscored the Malaysian Cocoa Board’s role in advancing research, technology, and sustainability in the country’s cocoa sector. Students gained a first-hand look at modern processing techniques, cutting-edge equipment, and the evolving standards that shape cocoa quality and innovation.
The global chocolate industry is projected to reach USD 254.74 billion by 2029, driven by increasing demand for artisanal and ethically sourced products. Exposure to the entire cocoa value chain not only enhances students’ technical capabilities, but also instils a greater appreciation for sustainable sourcing and responsible production—key pillars of the modern culinary industry.
By linking classroom theory with real-world insights, this industry-based learning opportunity empowered students to understand the bigger picture of food production. They left the experience with not just refined knowledge, but also a deeper sense of professional purpose and environmental awareness. As Malaysia continues to grow its reputation in cocoa research and specialty chocolate, equipping future chefs with this holistic view is vital for sustainable growth.
