When Art Meets Food Science: A Bold Culinary Experiment

Academic excellence takes on new meaning when boundaries between disciplines begin to blur. By merging digital art, cultural heritage, and culinary science, a groundbreaking learning journey unfolded that redefined the way knowledge is taught and experienced.

It all began when Principal Leong and Programme Leader Mr. Lee Chin Ching visited Penang’s first-ever Immersive Art Exhibition, hosted by D’Adventurous Project. The exhibition’s use of technology to transform culture into multisensory storytelling became a spark for innovation.

That spark ignited in the culinary world. With guidance from renowned Chef Chong Chian Fung, students explored molecular gastronomy — the science-driven art of transforming flavours and textures. Their challenge? To create dishes and mocktails inspired by the emotions and themes of the Immersive Art Exhibition.

The journey culminated on 25 July 2025, when students presented their creations in a simulated service environment before an esteemed panel of industry experts, including:

  • Chef Kephoin Eh Wal, Gurney Bay Hotel

  • Chef Chong Chian Fung, Memoire Molecular Dining

What unfolded was more than a showcase. It was a dynamic collaboration where students demonstrated mastery of modern culinary techniques and received direct, real-world feedback from industry leaders.
